Roast Veg with Chicken Fillets

Ingredients

Rosie & Jim Chicken Fillets

Your favourite winter vegetables, we used:

  • Carrots
  • Parsnip
  • Sprouts
  • Peppers
  • Potatoes

For the marinade

  • 4 tablespoons olive oil
  • 2 teaspoons of Italian Mixed Herbs, optionally also oregano or rosemary
  • 1 teaspoon chilli flakes
  • 2 garlic cloves, peeled and pressed
  • 1 teaspoon onion powder or mustard
  • 1 teaspoon paprika
  • Salt & pepper to taste

Method

Wash the vegetables, cut into equal pieces and place on a baking tray.

Add all the ingredients for the marinade together in a bowl.

Mix the marinade with the vegetables.

Cook in the oven for about 50-60 minutes at 185°C. Check and turn them every now and then.

Cook the Rosie & Jim Fillets as per instructions.

Serve vegetables with the Rosie & Jim gluten-free chicken breast fillets and enjoy!
